Aam Panna
Ingredients

Raw Mango - 1 no
Melted Jaggery - 400 gm [Buy: https://goo.gl/ubCwuQ]
Peppercorns - 1 tsp [Buy: https://goo.gl/Ada5Ap]
Cardamom pods - 4 nos
Black Salt - 1 tsp [Buy: https://goo.gl/HXOcTv]
Cumin Powder - 1 tsp
Mint Leaves
Ice cubes

Method:
1. Pour enough water and pressure cook the raw mango for about 5 to 6 whistles.
2. Remove the skin and chop the mango.
3. Blend it to a fine puree. Add water if required.
4. To melt the jaggery - Ratio - 1/2 cup of mango puree to one cup of jaggery. (1:2).Once melted, strain the jaggery.
Note : The jaggery has to be melted to remove any dirt or impurities.
5. To make the concentrate for the aam panna - Stir the raw mango puree and the melted jaggery together, add 1 tsp of roughly pound peppercorns, Cardamom pods, 1 tsp of pound cumin powder, 1 tsp of black salt (kaala namak).
6. Mix everything and give a quick stir.
7. Switch off the stove. Stir for a few minutes to dissolve the lumps in the mango purree.
8. Cool the mixture. Bottle it and use it when you want to make the drink.

For Serving:
1. Take a desired amount of aam panna and pour enough water. Mix it well.
2. Take few ice cubes in a mason jar or any tall glass.
3. Add few mint leaves and fill the jar/glass with aam panna.
Refreshing aam panna is ready to taste!
