Ada Pradhaman

DESCRIPTION
Ada Pradhaman is a classic dessert or traditional payasam of Kerala.
Payasam especially Ada payasam, be it palada payasam (prepared with rice ada, milk and sugar) or ada pradhaman (prepared with jaggery, rice ada and coconut milk) is especially popular during the festival of Onam.
It is an integral part of Onam Sadhya Menu.
Today we will learn how to make Ada Pradhaman following this easy recipe presented by Mrs. Hema Subramaniam.

Ingredients
Adai ½ Cup
Jaggery 1 Cup
Ghee 1 Tsp
Cardamom Powder 1 Tsp
Water
Roasted Cashews
Roasted Raisins
Coconut milk


Method
For cooking the Adai, Put 1/2 cup of Adai in a boiling water and cook for 15 to 20 minutes till it is nice and soft.
Once the adai is completely cooked, turn off the stove and strain the adai. Keep it aside.
For melting Jaggery, pour 1/2 cup of Water and 1 cup of Jaggery and melt it completely.
Take a sauce pan, add a tsp of Ghee, add cooked Adai. Now, strain the dissolved Jaggery into the sauce pan.
Cook the Adai in the Jaggery syrup and once it thickens, add 1 tsp of Cardamom powder, roasted Cashews and roasted Raisins.
Quick stir it and leave it on low flame for 5 minutes and turn off the stove.
Now, pour the thick Coconut milk into it and mix it well.
Finally, garnish it with coconut bits and mix it well.
Traditional and tasty Ada Pradhaman is ready to serve.


Tips:
1. Add Coconut milk after it comes to the room temperature so that it won't curdle or break.
2. You can shop the coconut dices in some ghee or garnish it raw.
