AMARANTH STIR FRY (Siru-Keerai Poriyal) | Main Course - Side Dish
All on earth know the value of eating greens and want to consume it in some form or the other. It is rather difficult to give the greens to young children. So here is a Keerai recipe which can be easily prepared even by a beginner in cooking. And with the perfect blend of the different spices, it is easilt liked by different kids too.

Ingredients:
Green Amaranth (Siru Keerai) - 2 bunches (chopped)
Oil - 2 Tbsp.
Urad Dal - 1 tsp.
Cumin seeds - 1 tsp.
Mustard seeds - 1/2 tsp.
Red chillies - 5 no.’s
Garlic cloves - 10 no.’s (pounded)
Asafoetida powder - 1/2 tsp.
Curry leaves - a handful
Salt
Turmeric powder - 1/2 tsp.
Garnish with Fresh grated coconut

Method:
1. Heat oil in a pan. Add Urad dal, Cumin seeds, Mustard seeds, Red chillies, Garlic cloves, Asafoetida powder & Curry leaves. Sauté till you get a nice aroma.
2. Add the chopped Amaranth greens (Siru Keerai), Salt & Turmeric powder. Gently mix them together.
3. Close and cook in medium flame for 5 to 10 minutes.
4. Open and cook in high flame for 2 to 3 minutes or till the excess moisture is reduced.
5. Turn off and garnish with fresh grated coconut.

Best with:
Serve it as a side dish to any rice. It tastes best when had as side dish with sambar rice. It can also be had with any sort of roti or chapatti.
