BASUNDI | Sweets & Savouries
Basundi is an Indian sweet mostly in Gujarat, Maharashtra and Karnataka. It is a sweetened condensed milk made by boiling milk on low heat until the milk is reduced by half. It is nothing but reduced milk with a lot of sugar and nuts in it! It is pretty similar to the North Indian sweet delicacy, rabri. It is often served with Masala puri as a sweet accompaniment to a meal, but it can also be had whenever you wish to!


Ingredients:
Milk - 1 Litre
Cardamom Powder - 1 Tsp.
Sugar - 1/4 cup
Saffron in milk - 1 Tbsp.

Method:
1. First, Boil the milk in a wide non-stick pan. Let it reduce to half.
Note: Keep stirring at regular intervals.

2. Add cardamom powder and sugar. Stir till it reduces further to quarter.

3. Finally, add saffron milk and cook for another minute.

4. Turn off the stove and empty the contents into a bowl.
5. Garnish with chopped pistachios and almonds.

6. Your basundi is ready to serve either warm or cold.
