Bendakaya Pulusu
(Okra in Tamarind Gravy)
Ingredients

Okra/Lady's finger - 4 to 5 no.s
Shallots - 5 to 6 no.s
Oil - 1 to 2 tbsp
Garlic - 5 to 6 cloves
Green chilli - 1 no.
Tomato - 1 chopped
Tamarind puree - 1/4 cup
Jaggery - 1 tsp
Turmeric powder - 1/4 tsp
Chilli powder - 1 tsp
Coriander powder - 2 tsp
Salt to taste

For Tempering
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Red chilli - 2
Asafoetida powder a pinch
A few Curry leaves

Method:
1. Roast the Okra/Lady's finger with a tsp of Oil, to reduce the stickiness.
Tempering the ingredients
2. Heat Oil in a pan. Add Mustard seeds, Cumin seeds, Red chilli & Asafoetida powder.
3. Add Shallots with Garlic, green chilli, Curry leaves & saute it.
4. Once the Onions turn brown, add the Tomatoes & saute it.
5. Then add Salt, Turmeric powder, Chilli powder, Coriander powder & mix well.
6. Now add the roasted Okra/Lady's finger to the mix. It's time to add the Tamarind puree & water.
7. Cover the pot & let it cook for about 10 minutes.
8. Finally add a tsp of Jaggery for a touch of sweetness.
9. Serve it with steamed Rice & little Ghee.
