Boondi Ladoo

Ingredients
For Boondi Batter
Besan/Gram flour - 1 cup
Cardamom powder - 1/4 Tsp
A pinch of Yellow food color
Water
Oil for frying

For Sugar Syrup
Sugar - 1 cup
Water - 3/4 cup
Cardamom powder - 1/4 Tsp
A pinch of Cooking Camphor (optional)

For Ladoo’s
Roasted Raisins
Roasted Cashew nuts
Ghee - 2 Tsp

Method:
For batter:
1. Take a cup of besan powder/gram flour in a bowl, add some cardamom powder and a pinch of food colouring and mix well.



2. Add water to the bowl gradually and keep mixing continuously so no lumps are formed. The batter should now have a thin pouring consistency.



For sugar syrup:
Heat water in a container and add sugar to it and mix it well until it boils. Add some cardamom powder to the sugar syrup for flavouring. Turn off the stove once it thickens. Pour the sugar syrup into a wide bowl.



You can also add some cooking camphor to the syrup for a nice aroma. (Optional)



For the Ladoo’s:
1. Heat some oil in a pan. Once the oil is boiling, take a perforated ladle and pour some batter over it. Stir gently so the batter drops into the oil in the shape of tiny balls (boondi’s). Fry the boondi’s until the oil stops bubbling.



Now add the fried boondi’s to the sugar syrup. Mix well until the boondi’s absorb all the sugar syrup.



Now add some raisins, roasted cashew nuts, and a little ghee, and mash it gently.



Make a bit of mixture and roll it in your palms to make your ladoo’s of your desired size.



Your desired Boondi Ladoo is ready.
