Cashew Pulao

DESCRIPTION
Cashew Pulao
Ingredients

Basmati rice - 250 ml
Ghee - 3 tsp
Cinnamon
Bay leaf
Star anise
cardamom - 3 no
Cloves - 5 no
Mace
Cumin seeds - 1/2 tsp
Cashew nuts - 100 gms
Onion - 2 sliced
Green chili - 2 slit
Ginger garlic paste - 1/2 tsp
Salt
Water - 1 3/4 cup

Method:
1.Take a glass jar, add 250ml of basmati rice. Wash it till the water runs clear and soak in water for 15 minutes.
2.Take a pressure cooker. Add 3 tsp of ghee, whole spices - cinnamon, bay leaf, star anise, 3 cardamoms, 5 cloves, mace, 1/2 tsp of cumin seeds and roast 100 gms of cashew nuts along with the mixture.
3.Once cashew nuts turn golden, add 2 sliced onion and saute till they are transparent.
4.Now, add 2 green chili, 1/2 tsp of ginger garlic paste, salt, soaked basmati rice and 1 3/4 cup of water for 1 cup of basmati rice.
5.Close and cook on medium high for 2 whistles.
Cashew Pulao is now ready to be served.
