Chettinad Masala Powder
Ingredients

Coriander Seeds - 2 tbsp
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tsp
Ajwain - 1/2 tsp
Peppercorns - 1 tsp
Fenugreek Seeds - 1/4 tsp
Cinnamon - a piece
Cloves - 6 no
Cardamom - 4 no
Poppy Seeds/khas khas - 1 tsp
Star Anise - a piece
Mace - a piece
Red Chillies - 8 no.

Method:
1. Dry roast all the ingredients.
2. Once it turns golden brown color, turn off the stove and cool it.
3. Grind it to a fine powder.
4. Your Chettinad masala powder is ready. You can store it for a week.
