Chicken Vindaloo Non-veg Gravy

CHICKEN VINDALOO | Main Course - Gravy Side Dish
Chicken Vindaloo, a sure delight for every chicken lover out there. Have you ever had hot rotis with spicy vindaloo on a cold raining day? Maybe I am exaggerating when I say nothing gets better than this, but that is exactly how I feel about this dish. It is spicy, hot and full of flavour, which makes it a perfect dish to be had on a rainy day. Each mouthful tastes so yummy and good, and people are often left wanting for more. Here is a simple recipe for this delish curry which is usually served with rice or Rotis.

Ingredients:
Boneless Chicken - 1/2 kg
Ghee - 1 Tbsp.
Oil - 2 Tbsp.
Bay leaf - 3 no.'s
Onion - 2 no.'s thinly sliced
A few chopped Coriander leaves

For Vindaloo Masala
Coriander seeds - 1 Tbsp.
Cumin seeds - 2 Tsp.
Peppercorns - 1 Tsp.
Fenugreek - 2 Tsp.
Mustard seeds - 1 Tsp.
Red chilli - 6 no.'s
Cinnamon stick - 3 no.'s (small)
Clove - 10 to 12 no.'s
Cardamom seeds - 1 Tsp.
A piece of Ginger
Garlic - 5 no.'s
Salt to taste
Turmeric powder - 1/2 Tsp.
Jaggery/Brown Sugar - 1/2 Tsp.
Vinegar - 3 Tbsp.
A little Water

Method:
Step 1: Dry roasting the ingredients
1. Dry roast the coriander seeds, cumin seeds, peppercorns, fenugreek, mustard seeds, red chillies, cinnamon sticks, cloves & cardamom seeds.
2. Once you smell a nice aroma, turn off the flame & Let it cool down.

Step 2: To prepare Vindaloo Masala
3. Add the roasted ingredients to a mixer jar.
4. Add a piece of Ginger, garlic, salt, turmeric powder, jaggery/Brown Sugar and vinegar to the jar. Grind it. While grinding add a little Water. Grind into a fine paste. Your Vindaloo Masala paste for Chicken is ready!

Step 3: Mixing & marinating
5. Add the Vindaloo Masala paste to 1/2 Kg of Boneless Chicken & mix well.
6. Let it marinate for a minimum of at least 8 hrs or overnight.

Step 4: Cooking
7. To a wide saucepan, add ghee, 1 Tbsp. of oil, bay leaf and the thinly sliced onions. Saute it until the onions turn brown in colour. Keep the onions aside.
8. To the same saucepan, add another Tbsp. of oil & the marinated chicken pieces. Let it cook for about 10 minutes.
9. Now add the browned onions and mix well.
10. Add some water and mix well. Close the pan with a lid and simmer the flame.
11. Cook till the chicken turns soft and it forms a thick gravy.
12. Garnish it with chopped Coriander leaves & Serve hot with rice or rotis.
