Making light, airy, evenly browned crêpes that are just a little crisp around the edges is no harder than making pancakes. Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand.
The thin, French-style pancakes can be filled with ham and cheese and paired with a green salad for a savoury version, or topped with fruit and whipped cream to satisfy your sweet tooth. Here is the basic recipe for crepes.

Ingredients:
All-purpose flour - 1 cup
Milk - 300 ml
Egg - 1
A pinch of Salt
Butter
Vanilla essence - 1/2 tsp.

Preparation:
1. Add the flour, egg, milk, a pinch of salt, vanilla essence and water to a mixer.
2. Grind it together to get a nice thin batter.
3. If the batter is too thick, add some more milk and dilute it until it is of the right consistency.

Method:
1. Take a griddle or frying pan, and greasing it with some butter spread all over the surface, and heat it over a medium high flame.
2. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe.
3. Either spread the batter using the back of a spoon or cup, or tilt the pan with a circular motion so that the batter coats the surface evenly.
4. Cook the crepe for about 2 minutes, until the bottom is light brown.
5. Since the batter is very thin, you don’t have to flip it over to the other side, but you may do so if you wish to. Loosen the crepe with a spatula, flip it over and cook the other side as well.
6. Voila! Your tasty crepes are ready to be served!

Best with:
These crepes are best when coated with a layer of hazelnut spread. But, you can also have it with some chocolate syrup, maple syrup, any jam or fruit preservative, powdered sugar, honey, or even fresh cream. This dish is one that tastes wonderful when accompanied by any sweet thing!
