Dhaba Style Veg Curries

Dhaba Style Paneer Masala
Ingrdients

Paneer
Black Cardamom - 2 nos
Green Cardamom - 2 nos
Few pieces of Cinnamon
Few Cloves
Few Peppercorns
Bay leaf - 2 nos
Ghee - 2 tbsp
Onion - 2 nos finely chopped
Ginger garlic paste - 1 tsp
Tomatoes - 3 nos grated (skin removed)
Turmeric powder - 1/4 tsp
Salt to taste
Kashmiri Red chili powder - 2 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Water - 1 cup
Gram flour - 2 tsp
Garam Masala powder - 1/2 tsp
Few Kasuri methi
Sugar - 1 tsp

METHOD:
1. Dry roast black cardamom, green cardamom, cinnamon, cloves few peppercorns and finally add bay leaves in a pan (Buy https://goo.gl/tJY9id )
2. Add ghee, onions & saute till it turns light brown.
3. Now, add ginger garlic paste, grated tomaotoes (skin removed) & saute it.
4. Then Add turmeric powder & salt. Saute till the raw smell goes and the oil separates.
6. Add Kashmiri red chili powder , coriander powder, cumin powder, gram flour & water. Close the lid (Buy https://goo.gl/HVptwr ) & let it cook for few more minutes.
7. Once the oil got separated, add the paneer.
8. Finish the dish by adding gram masala & kasthuri methi. Mix it well.
9. Check for seasoning. Add sugar to balance the tangy taste.
10. Serve hot with paratha, tandoori rotis or naans.

Dhaba Style Chana Masala
Ingredients

Chickpea - 100ml (Soaked)
Water
Cooking soda - 1/4 tsp
Salt to taste

Muslin Cloth
Cinnamon - 1 no.
Black Cardamom - 2 nos
Clove - 4 to 5 nos
Tea powder - 1 & 1/2 tsp

Ghee - 2 tsp
Grated Onion - 2 nos
Pounded Ginger - 1 tsp
Grated Tomato - 2 nos
Turmeric powder - 1/2 tsp
Chili powder - 2 tsp
Coriander powder - 1 & 1/2 tsp
Garam Masala powder - 1 tsp
Cumin powder - 1 tsp
Dry Ginger powder - 1 tsp
Salt to taste
Yogurt/Curd - 3/4 cup
Few chopped Coriander leaves
Green chili - 3 to 4 nos slited
Ginger julienne

Method:
1. Take a muslin cloth (Buy : https://goo.gl/K1gdCm ), add cinnamon, black cardamom, cloves, tea and tie it up.
2. Take a pressure cooker (Buy : https://goo.gl/7cekH5 ) add chickpea, water ( water should cover the chickpea ), cooking soda, salt, put the tied muslin cloth and pressure cook it for 4 to 5 whistles.
3. Take a wide sause pan (Buy : https://goo.gl/tJY9id ), add ghee, grated onion, pounded ginger saute well.
4. Once the raw smell goes off, add grated tomato, turmeric powder, chili powder, coriander powder, garam masala powder, cumin powder, dry ginger powder and salt. Saute it well.
5. Add yogurt/curd, coriander leaves and close it for few minutes.
6. Add the cooked chickpea (remove the muslin cloth) to the masala.
7. Check for seasoning.
8. Garnish it with slitted green chillies, ginger julienne and coriander leaves. Close it for few minutes.
Chana masala is ready!

Dhaba Style Bhindi Masala
Ingredients

Ladies finger - 200 gm
Oil
Bay leaf
Black cardamom
Cardamoms - 3 nos
Mace - 1 no
Cinnamon
Cloves
Onion - 1 no
Green chilies - 2 no
Ginger Garlic paste - 1 tsp
Tomatoes puree - 4 nos
Turmeric powder - 1/4 tsp
Kashmiri chili powder - 2 tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - 1/4 tsp
Salt
Curd - 1 1/2 tsp
Water
Sugar - 1 tsp
Kasuri methi
Fresh cream
Coriander leaves

Method:
1. Take a wide pan, add oil, 200 gm ladies finger and roast well till it turns to dark color. Keep it aside.
2. Take a sauce pan and add oil.
3. Add these spices - Bay leaf, 1 black cardamom, 3 cardamoms, 1 mace, cinnamon and few cloves. Saute them all together.
4. Add 1 chopped onion, 2 chopped green chilies and saute them.
5. Once the onion turns brown, add 1 tsp ginger garlic paste, 4 tomatoes puree, 1/4 tsp turmeric powder, 2 tsp kashmiri chili powder, 1 tsp cumin powder, 1 tsp coriander powder, 1/4 tsp garam masala, salt and mix them all together.
6. Add 1 1/2 tsp of curd, little water and keep the flame low. Let the oil separates .
7. After the raw smell goes off, just add 1 tsp of sugar ( Its optional).
8. Add the roasted bhindi to the mixture.
9. Garnish it with kasuri methi, fresh cream (optional) and some coriander leaves.
Delicious dhaba style bhindi masala is ready to serve!
