Fruitcakes are a definite part of the cuisine on festive occasion Christmas, no matter how you celebrate it! And, baking one has never been difficult. But, do you get confused looking at the many different recipes out there for the same fruitcake? The only way is to try each one until you find the one that satisfies you the most. This is the recipe that I follow every year!

FRUITCAKE | Cakes
Desserts are that course of a meal that is not always prepared in our households unless its a special occasion. So, on those few days when the kids do get to have desserts, they are really satisfied, no matter what the dessert is. So, why not take advantage of this and make the dessert a healthy one? Why not discard the chocolates and syrups for once and serve a healthy fruitcake to our kids this time? Not only are the kids happy, but so are you, watching your picky kids devouring the healthy dessert happily without making a fuss about eating vegetables!

Ingredients:
Unsalted Butter - 175 gms
Mixed Dry Fruits - 400 gms
Honey - 150 gms
Light Brown Sugar - 175 gms
All Spice powder - 1 Tsp
Orange Zest - 2 nos
Orange Juice - 125 ml
Egg - 4 nos
All purpose flour/Maida - 150 gms
Almond powder/meal - 100 gms
Salt - 1/2 Tsp
Baking Soda - 1 & 1/4 Tsp
Baking powder - 1 & 1/4 Tsp

Method:
1. Melt the unsalted butter in a huge pan.
2. Add the mixed dry fruits and honey to the melting butter.
3. Add the light brown sugar, all-spice powder, orange zest, and orange juice. Mix well.
4. Let it cook for about five minutes on a low flame (simmer) until it starts bubbling.
5. Let the mixture cool completely and empty the contents into a huge mixing bowl.
6. Whisk four eggs in a separate bowl.
7. Pour the whisked eggs over the mixture and mix it well.
8. In a separate bowl, add some maida, almond powder, salt, baking soda and baking powder. Mix well.
9. Add the dry mixture to the wet mixture in intervals and mix well.
10. Grease the cake tin and layer it with a butter sheet.
11. Pour the batter into the layered the cake tin.
12. Pre-heat the oven at 150 degrees for 15 minutes.
13. Place the tin into the oven and bake for about 90 minutes at 150 degrees.
14. Once baked, let the cake cool and then remove it from the tin by opening the tin or carefully pulling out the butter sheet.
15. Remove the butter sheet. Your cake is ready to be served!
