Honey glazed Banana & Coconut fritters
Crispy on the outside, tender and juicy on the inside, and glazed with honey. Sounds yummy. Doesn't it? Besides, coconut is a favourite of everyone when it comes to additives to sweets, is it not. The addition of coconut to sweets only ever enhanced the taste of the sweet. It never led us wrong. Combining this grated coconut with some nutritious bananas and the healthiness of some sweet honey, Hema Subramanian shows us how to make Banana & Coconut fritters - a delicious, sweet snack made with atta (wheat flour).

Difficulty: Hard

Ingredients:
1 Large banana (cut into small pieces)
Few roasted cashew nuts
1 Coconut freshly grated
Brown sugar(can also use refined sugar)
Honey
Cardamom powder
Water (for dough)
Atta (Wheat flour)

Method:
1. Make a soft dough using the wheat flour and some water.
2. To make the filling: take a large mixing bowl and add the banana pieces, coconut, brown sugar and cardamom powder into it.
3. Mix them well and finally add the roasted cashew nuts to it.
4. Form small balls from the dough and roll it flat.
5. Take a little of the filling, place it at the center of the rolled dough and close the flap of the dough. Seal it well to stop the filling from popping out when frying.
6. Meanwhile, heat some oil in a wide pan for frying.
7. Once the oil is hot, gently drop the fritters into it.
8. Deep fry them on a medium-low flame until they turn a beautiful golden-brown in colour.
9. Garnish with some honey and roasted cashew nuts.
10. Serve hot.
