Indo-Chinese Recipes

DESCRIPTION
Everyone has those secret cravings for something spicy and hot. And Indo-Chinese is the way to go to satisfy those recurring cravings. So, a few simple recipes to turn your bad day into a good one and to make your good day even better. After all, there’s nothing better to soothe oneself than with some spicy and hot Indo-Chinese meal!

DRY VEGETABLE MANCHURIAN
Ingredients
Carrot - 1 no. grated
Cabbage - 1 cup finely grated
French Beans - 2 no.’s cut up
Capsicum - 1/2 no. finely chopped
Chopped Ginger - 1/2 tsp.
Chopped Garlic - 1/2 tsp.
Spring onion stalk - 2 tsp.
Spring onion - 2 tsp.
Salt to taste
Pepper
All-purpose flour/Maida - 3 tsp.
Corn flour - 2 tsp.
Oil for frying

For Manchurian sauce
Oil - 2 tsp.
Chopped Ginger - 1/2 tsp.
Chopped Garlic - 1/2 tsp.
Spring onion - 1/4 cup
Spring onion stalk - 2 tsp.
Vinegar - 2 tsp.
Soy sauce - 2 tsp.
Red Chilli sauce - 3 tsp.
Tomato Ketchup - 2 tbsp.
Pinch of Salt
Pepper powder - 1/4 tsp.
Little Water
Garnish it with Spring Onion stalk

Method:
1. In a mixing bowl add all the chopped vegetables (carrot, cabbage, French beans, capsicum, chopped ginger, chopped garlic, spring onion stalk, spring onion) and season them with salt, pepper, all-purpose flour/maida and corn flour.
2. Mix well. The vegetables will naturally leave water which is enough to bind the ingredients.
Note: If the vegetables did not bind add little more all-purpose flour/maida to bind them well.
3. Take some of this mixture in your hands and make them into even sized balls using your palms. Keep these balls aside.
4. Now, heat some oil for frying in a kadai.
5. Add the vegetable balls and deep fry them till they turn crisp and golden in colour.
Note: Keep the flame on low, it has to cook through otherwise it would remain uncooked from the inside.

For the Manchurian sauce:
6. Heat oil in a pan. Add chopped garlic, chopped ginger, spring onion, and half of the spring onion stalks to the pan. Sauté for A few minutes.
7. Now add vinegar, soy sauce, red chilli sauce, tomato ketchup, salt and pepper powder. Mix well.
8. Then add little water to the sauce to dilute it and let it cook for a few minutes.
9. As the sauce thickens, add the fried vegetable balls and coat them evenly using the sauce.
10. Garnish it with the rest of the chopped spring onion stalk.
11. Serve the hot Dry Vegetable Manchurian as a starter and enjoy with your family and friends.

VEGETABLE NOODLES:
Ingredients:
For cooking noodles
Water
Salt
Noodles - 200 grams
Little Oil

For vegetable noodles
Sesame oil - 2 Tbsp.
Few sliced Garlic
Few sliced Ginger
Green chilli - 2 no.’s sliced
Onion - 1 no.
Carrot (thinly sliced)
Green beans (sliced)
Cabbage (shredded)
Red, Green & Yellow bell peppers
Spring Onion whites
Salt
Pepper - 1 Tsp.
Soy sauce - 2 Tsp.
Vinegar - 2 Tsp.
Chili sauce - 3 Tsp.
Cooked Noodles
Spring Onion Greens

Preparation:
1. Take a large pot and pour enough water on it and placing it on the stove, bring the water to a boil.
2. Add a little salt (app. ½ or 1 tsp. – as per your preference) and a packet of noodles (app. 200 grams) to the pot.
3. Once the noodles are soft and completely cooked, strain it. Drizzle a little oil on it to avoid them sticking together and keep it aside.

Method:
1. Take a wok or a wide saucepan and pour a little sesame oil in it.
2. Add a few cloves of garlic that have been thinly sliced, a piece of ginger thinly sliced, 2 green chillies thinly sliced and an onion thinly sliced.
3. Sauté for a few minutes. Now add the vegetables, i.e., carrots, green beans and cabbage. Sauté them for about two minutes.
4. Now, add the thinly cut up bell peppers and mix well.
5. Add the spring onion whites and give it a quick stir.
6. Now, add the seasoning to the vegetables, i.e., add salt, pepper, soya sauce, vinegar and chilli sauce. Mix all these together so that the vegetables are evenly seasoned.
