Millet Upma
Upma is a simple and comforting food commonly prepared with rava and sometimes, vegetables too. It is wholesome, nutritious, easy to digest and also very easy to prepare. Upma can be also be prepared in different varieties by using different base ingredients like poha, broken wheat, puffed rice, etc. One such variety of this common dish is the Millet Upma, prepared not just with Indian spice powders but also onions, garlic, and other vegetables. This imparts a healthy twist to the upma making it holistic in terms of taste too.

Ingredients
Foxtail Millet/Thinai/Kangni - ½ Cup
Ghee - 2 Tsp
Chana dal - 1 Tsp
Urad dal - 1 Tsp
Mustard seeds - ½ Tsp
Cumin seeds ½ Tsp
Onion - chopped - 1 No
Green chilli - Chopped - 2 Nos
Ginger - Chopped
Few curry leaves
Carrot - Finely Chopped - 1 No
Few green beans - Chopped
Green peas ½ Cup
Tomato - Chopped - 1 No
Salt to taste
A pinch of Turmeric Powder ¼ Tsp
Water - 1 ½ Cup


Method
Soak half a cup of millet with enough water for about 15 minutes and set aside.
Now heat a pan and add two tablespoons of ghee.
You can use oil instead of ghee but ghee gives you better aroma and taste.
Now for the tempering, add half a teaspoon of mustard seeds, 1 teaspoon of chana dal, 1 teaspoon of urad dal and a half teaspoon of cumin seeds.
After the mustard seeds splutter add 1 finely chopped onions to the pan.
Add 2 finely chopped green chilies and 1 piece of ginger finely chopped and few curry leaves for flavor.
Cook the onions till they are transparent and add the finely chopped carrots and beans and cook it for about 2 minutes.
Now add half a cup of green peas and give it a stir.
Add the finely chopped tomatoes and cook for about a minute and add 1 teaspoon of salt and one-fourth teaspoon of turmeric powder.
Now cook the vegetables for about 5 minutes on medium-low flame.
Now add one and a half cups of water and close the pan and cook it for another 5 minutes.
After 5 minutes, take the soaked millets and strain the water and add the millets to the pan.
Now cook it for about 15 minutes on low flame till the millets become soft.
Remove the lid and give the upma a stir to spread the ingredients evenly.
The upma must have cooked perfectly, now serve the upma hot with hot sambar and chutney.
This recipe is made using foxtail millet but you can follow the same recipe for other varieties of millets available in the market such as barnyard millet.
