Prawn Balchao

DESCRIPTION
Prawn Balchao
Preparation Time: 45 minutes
Total Time: 1 hour
Serves: 6

Ingredients
Prawn - 250 gms
Onion - 2 chopped
Tomatoes - 2 chopped
Green chilli - 1
A few Curry leaves
Salt to taste
Water - 1 cup
Sugar - 1 tsp
A few Coriander leaves (optional)

To Make Balchao masala
Garlic - 4 cloves
Ginger a piece
Onion - 1 chopped
Red chilli - 3 to 4
Peppercorns - 1 tsp
Turmeric powder - 1/4 tsp
Vinegar - 2 tbsp
Cinnamon, Cloves, Chilli powder (Optional)

METHOD:
1. To make the paste: Grind the garlic, ginger, half of the onions, red chillies, peppercorns, turmeric powder, [cinnamon, cloves & chilli powder (Optional)] using vinegar(instead of water).
2. Take a deep pan. Add enough oil, add the remaining onions, sauté them to golden brown color. Add the green chillies, add few curry leaves and tomatoes, add salt, and then Balchao masala.
Increase the number of chillies if you like the dish extra spicy
3. Drop the fresh prawns gently in the pan, add some water(so that the prawns are cooked) add some sugar to balance the flavor.
4. Stir for a while. (until the water evaporates)
5. Garnish with some coriander leaves.
6. Check the seasoning before turning off the stove.
The Goan speciality dish, Prawn Balchao is ready to serve.
