Sambar Powder
Sambar powder is a flavorful South Indian style coarse textured spices powder. It is an important ingredient found in South Indian kitchens.

Ingredients

Coriander seeds - 4 tbsp
Red Chilli - 17 no.s
Chana Dal - 2 tbsp
Urad Dal - 1 1/2 tbsp
Cumin seeds - 1 1/2 tbsp
Peppercorns - 1 tbsp
Fenugreek seeds - 1 1/2 tsp
Mustard seeds - 1 1/2 tsp
A few Curry leaves
Turmeric powder - 1/2 tbsp
Asafoetida powder - 1/2 tbsp

Method.
There are three steps. Step 1: Roast the ingredients one after the other
Step 2: Let them cool down
Step 3: Grind in to powder

Roasting is the most crucial step. You need to get the right color and aroma.
(Caution: Do not let any of the ingredients burned. Roast till you get a nice aroma. shift it to a container and let it cool down.)

1. Roast 1/2 cup Coriander seeds till light brown in color.
2. Roast about 17 long dried Red Chilli.
3. Roast 2 tbsp Chana Dal.
4. Roast 1 1/2 tbsp of Urad Dal.
5. 1 1/2 tbsp of Cumin seeds.
(Cumin seeds roast very fast. so be cautious & don't burn it)
6. 1 tbsp Peppercorns.
7. 1 1/2 tsp of Fenugreek seeds.
8. 1 1/2 tsp of Mustard seeds.
9. A few Curry leaves.
10. Now, turn off the stove & then add 1/2 tbsp of Turmeric powder,
11. Add 1/2 tbsp of Asafoetida powder.
12. Let the roasted ingredients cools down completely.
13. Grind them into a fine powder.
Your Sambar powder is ready.
Let it cool down & store in an airtight container. Use as & when you need.
