Savory Cornbread

DESCRIPTION

Number of servings: 3-4 persons

Ingredients

For Vegetable mixture
Butter - 1 Tbsp
Onion - 1 no. finely chopped
Green chili - 1 no. (De-seeded & chopped fine)
Cooked Sweet Corn kernels - 100 gms chopped

For Wet Ingredients
Thick Buttermilk - 175 gms
Egg - 2 nos
Melted Butter - 50 gms
Honey - 1 Tbsp

For Dry Ingredients
All purpose flour/Maida - 100 gms
Cornmeal - 100 gms
Baking Powder - 1/4 tsp
Baking Soda - 1/4 tsp
Sugar - 1/4 tsp

Grated Cheddar Cheese - 125 gms
(Add 3/4th)

Method

1. Heat butter in a pan. Add onion, green chili & saute till onion turns transparent.



2. Now add cooked sweet corn kernels & saute for 2 minutes.



3. Keep aside & cool the vegetable mixture.



4. For wet ingredients - In a bowl add thick buttermilk, egg (whisk it), melted butter, honey & mix well. Keep aside.



5. For dry ingredients - In a large bowl, add all purpose flour/maida, cornmeal, baking powder, baking soda, sugar & mix well.



6. It's time to combine dry & wet ingredients.

7. Add the sauted vegetable mixture, grated cheddar cheese (add 3/4th) & fold in all ingredients to the batter.



8. Grease the loaf tin with butter. Pour the batter & top it off with remaining cheddar cheese.



9. Pre-heat the oven at 180 degree for 10 minutes.

10. Bake at 180 degree for 25 to 30 minutes.



11. Cool it completely & then remove from loaf tin. Then cut into slices.

12. Simple & delicious Savory Cornbread is ready. Enjoy with your family & friends.
