SHANKARPALI | Snacks
An Indian snack item, traditionally enjoyed as a treat on the festive occasion of Diwali, Shankarpali is a snack that is an instant source of energy! It is a snack where the recipe can be altered slightly to make it sweet, sour or even salty! It is a popular snack amongst the Maharashtrian and Gujarati community in India and has a long shelf-life. It is also widely available in shops, enabling people to purchase ready-made shankarpali throughout the year and only prepare it at home during Diwali.

Ingredients:
Maida - 1 cup
Semolina - 1/4 cup
Powdered Sugar - 1/2 cup
Ghee - 3 Tbsp
Salt to taste
Milk - 1/2 cup
Oil for frying

Method:
1. If you don't have powdered sugar, powder the regular sugar in a blender to a fine powder.
2. In a wide bowl, add some maida, semolina, salt, powdered sugar and ghee.
3. Now add milk, little at a time, to mix the dough and knead well.
4. If the dough becomes sticky, gradually add the maida till it becomes of dough consistency.
5. Take out small portions of the dough and make small balls from it.
6. Roll out the dough balls flat using a roti roller.
7. Using a knife, cut it into several pieces of diamond or square shapes.
8. Heat enough oil in a Kadai for deep frying.
9. Once the oil is hot, gently drop the pieces in the kadai.
10. Fry them until they turn golden-brown in colour.
11. Let it cool completely and then store in airtight container.
12. Your Shankarpali is ready to be served whenever!
