Sooji Kesari (Semolina/Rava Kesari)

SOOJI KESARI (Rava/Semolina Kesari) | Sweets & Savouries
Rava Kesari or Kesari Bath is a south Indian sweet that is often made for festive occasions and on special days. It is also offered to the gods as Prasadam during several festivals like Navratri, Dusshera or Diwali. Once you make this basic Kesari perfectly, you can make different types like Milk Rava Kesari, Pineapple Kesari, Mango Kesari, semiya Kesari etc.

Making a soft, shiny and lump-free Rava Kesari like hotel must be the dream of many beginners in cooking. I used to wish the same. Yet, I found out later, this is one of the easiest recipes to be made! Hence, it is an ideal recipe for beginners! Here is a short recipe for this simple dish!

Ingredients :
Water - 3 cups
Kesari Color - 1 pinch
Semolina / Rava (Roasted) - 1 cup
Sugar - 1-1/4 cup
Ghee - 1 to 2 Tbsp.
Cardamom powder - 1 Tsp.
Few Roasted cashew nuts and raisins

Method:
1. In a wide pan, add about 3 cups water and boil.

2. Add a pinch of food colour and mix well. Now add roasted rava and mix.

3. Once the rava is cooked/thickens, add sugar. Keep stirring continuously.



4. Add the required amount of ghee and mix.

5. Now, add cardamom powder and mix gently.

5. Finally, garnish with few roasted chopped cashews and raisins.
