DESCRIPTION
Corn & Cheese Toast
Ingredients

Bread Toast
Butter - 1 tbsp
Onion - 1 no. finely chopped
Garlic - 4 to 5 cloves chopped
Capsicum - 1/2 no. chopped
Cooked Sweet Corn - 1 cup
Salt to taste
Pepper - 1/2 tsp
Italian seasoning - 1 tsp
All Purpose flour (Maida) - 2 tsp
Milk - 1 cup
Cheese - 2 slices

Method:

Step 1 - Saute the vegetables
1. Melt 1 tbsp of Butter
2. Add finely chopped Onions, Garlic, Capsicum & saute for 2 minutes
3. Add the cooked Corn kernels
4. Add Salt, Pepper, Italian seasoning & mix well

Step 2 - Make it creamy!
5. Add 2 tsp of All purpose flour (Maida)
6. Keep the flame on low & add 1 cup Milk gradually
7. Add 2 slices of Cheese & mix till it melts.
8. Check for seasoning & turn off the stove.
9. Make Bread toast cut into triangles & top it with corn & cheese.


Sweet Corn Chicken Soup
Ingredients

For the Chicken stock:
Chicken (with bone) - 1/4 kg
Carrot - 1 no
Onion - 1 cup
Garlic Few Cloves- Pounded
Few chopped celery
Rock salt
pepper - 1 Bbsp

For the Creamy Corn
Corn - 2 nos
Butter - 1 Tbsp
Salt & Pepper
Water - 2 cups
Corn flour to dilute - 1 tsp

For the Soup
Oil - 2 tsp
Spring onion whites and stalk
Few Ginger Juliens
Salt & Pepper
Egg - 1 no. (whisked)
Corn flour to dilute - 1 tsp

Step 1: Making the Chicken stock
1. Add the chicken, carrot, onion, garlic, celery, rock salt, pepper and water
2. Close and cook for 25 minutes
3. Strain and seperate the stock water
4. Shread the chicken meat

Step 2: Making Creamy Corn
5. Pressure cook the corns with some water and salt
6. Once cooked, seperate the kernels
7. Gring half of it to paste
8. In a pan, heat butter.
9. Add remaining kernels, salt & pepper, water and corn paste.
10. Close & simmer for 10 mins.
11. Dilute corn flour & add to the cream to thicken it
12. Cook for another 5 to 10 minutes.

Step 3: Making the Sweet Corn Chicken Soup
13. In a pan, heat oil.
14. Add spring onion whites, ginger juliens, shredded chicken and saute for 1 min.
15. Add the corn cream base, chicken stock & spring onion stalk
15. Season with salt & pepper
16. Close and simmer for 10 mins.
17. Pour whisked egg and spread around
18. Add diluted corn flour to thicken the soup. Simmer for few minutes before serving

Sweet Corn Fried Rice
Ingredients:
Sesame Oil/Oil - 1 Tbsp
Onion - 1 no. chopped
Few Garlic Cloves Chopped
A piece of Ginger chopped
Spring onions - 1 no. bunch
Green Capsicum - 1/2 no. chopped
Red Capsicum - 1/2 no. chopped
Yellow Capsicum - 1/2 no. chopped
Salt to taste
Pepper powder - 1 Tsp
Cooked Sweet Corn kernels - 1 cup
Spring onion stalk - 1/2 no.
Cooked Basmati Rice - 1 bowl

Method:
1. Heat some oil in a wide saucepan.
2. Add the chopped onion and saute until the onions turn slightly transparent in colour.
3. Now, add the chopped ginger, garlic, spring onion bulb, and the different coloured capsicums. Saute well.
4. Add salt and pepper to the pan. Mix well so the masala is properly blended in.
5. Now, add the cooked sweet corn kernels. Mix well.
6. Add the chopped spring onion stalk to the pan and mix.
7. Finally, add the cooked rice and mix evenly so the vegetables and rice are properly blended together.
8. Voila! Your dish is ready to be served!
