Vegetable Samosa

Samosas are a baked or fried dish with some savoury filling, such as spiced potatoes, onions, peas, lentils, macaroni, noodles, cheese, minced lamb or minced beef, depending on the regional varieties. In India, they are usually vegetarian, made with spiced potatoes, onions and peas. A common dish that is a favourite snack of every citizen, be they a male or female, young or old! And, available at crazy low prices, this is one snack that is affordable by every person out there!
India’s popular snack that finds a place in almost every bakery or chat shop; it’s our very own Samosa. Samosa is always store bought and on rare occasions prepared at home, like today.

Number of servings: 4-5 persons
Ingredients:
Maida - 3/4 cup
Baking powder - 3/4 tsp.
Salt
Water
Oil
Boiled Potatoes – 3 medium sized
Boiled Peas – few
Boiled Beans – few
Boiled Carrot – 1 small
Chopped Onion - 1 large
Chopped Ginger – 1 piece
Chopped Green Chili - 1 no.
Coriander leaves
Garam masala - 1 tsp.
Coriander powder - 1 tsp.
Carom Seeds (ajwain) - 1/4 tsp.
Turmeric powder - 1/4 tsp.
Cashew nuts
Red chili powder – 1 tsp. (2 tsp.’s if you prefer very spicy samosa’s)

Method:
To make the dough, take ¾ cup of maida in a huge mixing bowl. To it, add salt, ¾ tsp. baking powder, 2-3 tsp. of oil, and mix it.
Gradually pour in some water and mix it to make a stiff dough. Once the dough is mixed let it aside for 30 minutes.


To make the filling, add 3 tsp.’s of oil to a large pan; add the onions, ginger, green chilies, carom seeds and sauté well.

After sautéing the onions, add the boiled vegetables (potatoes, carrot, peas, beans) one at a time. Now, add the spice powders, i.e. 1 tsp. turmeric powder, 1-2 tsp. chili powder, 1 tsp. coriander powder, 1 tsp. garam masala, and salt to taste. Mix it well.

Add cashew nuts to give it a little crunch. (You can also add peanuts)

Finally add some coriander powder and mix well.

Let the filling cool for some time.

Take small portion of the dough, roll it flat (very thin).

Take a small portion of the filling, place it in one corner, fold and seal the ends, fold over overlapping, and seal it.

Deep fry it in hot oil.

Hot and Tasty Samosas are ready.

Savoury comfort food at its best, a crisp exterior filled with a savoury potato stuffing that goes very well over a hot cup of chai especially on a rain filled, cold day. Serve it hot with some spicy chutney for better taste.
