Wheat Idli & Dosa

DESCRIPTION
Idli is one of the most popular south Indian dishes out there is probably a favourite of every person out there walking the streets! Dosa is an equally popular dish. These dishes are one of the most healthy and nutritious South-Indian meals. However, these Idlis and dosas we are making today is different from the common dosa, because this dosa is made using broken wheat and other ingredients. These soft and spongy idlis and dosas are eaten for breakfast and as a snack. They are typically served with coconut or onion chutney and some hot Sambar.

Ingredients :
Broken Wheat - 1 cup (250 ml)
Red Poha - 1/4 cup
Urad Dal - 1/2 cup
Fenugreek seeds - 1 Tsp
Water
Salt - 1 Tsp
Oil

Method:
Soak the broken wheat in enough water.

Soak the redpoha in enough water in a separate bowl.

Take the urad dal in another bowl.

Add the fenugreek seeds to the urad dal.

Soak them in enough water. Let them soak for three hours.

Now, grind the soaked urad dal. Add a little water and grind again into a coarse mixture.

Now, add the soaked red poha and grind. Finally, add the broken wheat.

Add a little more water and grind into a fine thick batter.

Empty the batter into a wide bowl or container. Add some salt and mix it in.

Close the lid and let it ferment for 12 hours or overnight.

Mix well once it ferments well.

Grease the Idli maker pans with some oil and add the batter to the pan.

Steam cook the idlis for 10 minutes on a medium-high flame.

Add a little more water to the remaining batter and mix it well so it becomes thinner.

Heat a tawa. Once the tawa is hot, pour a little batter and spread it evenly.

Add some oil to it. After a few moments, flip it over. Cook evenly on both sides.

Your Wheat Idlis and Dosas are ready to be served!
