Achari Aloo
Achari Aloo is a potato dish made using pickling spices. The slightly tangy and spicy flavours make this dish very special. You can pair it with any Indian bread for a hearty meal. Here is a step by step recipe to make it.

Boiled Baby Potato - 300 gms
Red Chili - 8 no
Fenugreek seeds - 1/2 tsp
Mustard seeds - 1 tsp
Fennel seeds - 1 tsp
Mustard oil - 3 tbsp
Kalonji seeds - 1 tsp
Cumin seeds - 1 tsp
Garlic paste - 2 tsp
Ginger paste - 2 tsp
Turmeric powder - 1/2 tsp
Chili powder - 1/2 tsp
Vinegar - 3 tbsp
kala namak - 1/2 tsp
Sugar - 1 tsp

Boil the potatoes and keep it aside.
Grind the Red chillies, Fennel seeds, Fenugreek seeds, Mustard seeds into a fine powder.
In a pan, heat the oil
Now add the kalonji seeds and the cumin seeds
Now add the ginger, garlic paste and fry it till the raw smell goes away
Add in the boiled and peeled potatoes and give it a toss
Now add the turmeric powder, chilli powder and salt
Give it a stir and add the ground masala mixture
Roast the potatoes with the masala
Now add the vinegar, vinegar gives it a tangy touch
Finally, add in the black salt and the sugar.
You can have this dish with rice or roti or as a snack.
