Brinjal Thokku

To make masala powder -
Coriander seed - 2 tbsp
Cumin seeds - 2 tsp
Peppercorns - 1/2 tsp
Red chilies - 6 nos

To make brinjal thokku -

Oil - 1 tbsp
Garlic - 2 tsp chopped
Onion - 1 no. Finely chopped
Curry leaves
Tomatoes - 2 nos finely chopped
Rock salt - 1 tsp
Turmeric powder - 1/2 tsp
Brinjal - 500 gms
Tamarind puree - 1/2 cup
Ground masala powder - 3 tbsp

Take 500 gms of brinjal
Cut them into small pieces and keep it aside
Heat a pan, add 2 tbsp of coriander seeds, 2 tsp of cumin seeds, 1/2 tsp of pepper
Dry roast them till they turn aromatic
Add 6 red chilies and roast them
Turn off the stove and let the ingredients come to room temperature
Grind them to a fine powder and keep it aside
Heat a pan and add 1 tbsp of oil
Add 2 tsp of finely chopped garlic, 1 medium-sized onion finely chopped
Add a few curry leaves and mix well
Saute the onions till they are golden brown in color
Add 2 medium-sized tomatoes finely chopped
Saute for 2 mins
Add 1 tsp of rock salt, 1/2 tsp of turmeric powder and mix well
Add the chopped brinjal pieces and saute for 10 mins or till the brinjal pieces are cooked well
Add 1/2 cup of tamarind puree
Add 3 tbsp of the ground masala powder and mix well
Cook the brinjal for about 10 mins on medium flame
Brinjal thokku is ready now
