CHANA/CHOLA MASALA POWDER | Masalas and Powders
The addition of Channa Masala never fails to enhance the taste of any Chole Recipe. One can easily find Channa Masala available at the grocery stores in any locality, but the taste of the masala one makes at home themselves always differs. You can tweak the quantity of each ingredient used to alter the spiciness to suit. This option, however, is not available when it comes to readymade chana masala powder! Besides, homemade Chana Masala Powder obviously makes the recipe more tempting and tasty than market available masala. So, let's make our own Chana Masala Powder by following this simple recipe!

Ingredients:
Red Chili - 8 no.'s
Coriander seeds - 2 Tbsp.
Cumin seeds - 1 Tsp.
Fennel seeds - 1 Tsp.
Shah Jeera - 1 Tsp.
White Sesame seed - 1 Tsp.
Peppercorns - 1 Tsp.
Bay leaf - 1 no.
Star Anise - 1 no.
Piece of Cinnamon
Black Cardamom - 2 no.'s
Green Cardamom - 5 no.'s
Clove - 10 no.'s
Turmeric powder - 1/2 Tsp.
Dry Mango powder - 1/2 Tsp.
Kala Namak/Black Salt - 1/2 Tsp.
Dry Ginger piece/Dry Ginger powder - 1/2 Tsp.

Method:
1. Dry roast the red chillies separately.
2. Next, add coriander seeds & dry roast them separately.
3. Then add cumin seeds, fennel seeds, shah jeera, white sesame seed & dry roast it together.
4. Now, add peppercorns, bay leaf, star anise, cinnamon, black cardamom, green cardamom, clove & dry roast it together.
5. Let the roasted ingredients cool down.
6. To the mixer jar, add the roasted ingredients, turmeric powder, dry mango powder, kala namak/black salt, dry ginger piece/dry ginger powder & grind to a fine powder
7. Chana/Chole Masala Powder is ready, you can store it in an airtight container.

Tips:
You can increase or decrease the quantity of red chilli added depending on your tolerance to spiciness.
You can leave out one of the ingredients if you are allergic to it, but it might alter the taste of the powder!
