Ghee - 3 tsp
Chopped onion - 1 no
Chopped garlic - 10 nos
Chopped green chili - 2 nos
Peppercorns - 1 tsp
Cumin seeds - 1 tsp
Cloves - 6 nos
Chicken legs - 2 nos
Chopped carrot - 1 no
Chopped tomato - 1 no
Salt - 1 tsp
Tomato puree - 1 cup
Hot water - 3 cups
Chicken stock - 1 no
Basmati rice - 250 ml
1.Take a pot with a lid. Add 3 tsp of Ghee, 1 chopped onion, 10 chopped garlic, 2 chopped green chili. Saute it on high flame until the onion is transparent.
2.Add 1 tsp of peppercorns, 1 tsp of cumin and 6 cloves and quick mix.
3.Seer 2 chicken legs with the skin(make small cuts on the chicken) on both sides with the mixture.
4.Add 1 tsp of kabsa spice mix and 1/2 tsp of another side. Make sure spice mix is completed seasoned with the chicken pieces.
5.Add 1 chopped carrot, 1 chopped tomato, 1 tsp of salt, 1 cup of tomato puree, grated nutmeg, 3 cups of hot water, 1 cube of chicken stock.
6.Close the pan and cook for 20 minutes on medium flame.
7.After 10 minutes, open the pan and turn the chicken pieces and close it again and cook for another 10 minutes.
8.Now, chicken is cooked. Add 1 cup of basmati rice(250 ml) and some raisins into the pan.
9.Close and cook the rice on low flame until it is done. Maybe 10 minutes.
Chicken Kabsa is ready to be served.
