Coconut Poli

To Make Dough
Maida - 1 Cup
Salt - 1/4 Tsp
Gingelly Oil - 3 Tbsp

To Make Filling
Water - 3/4 Cup
Jaggery - 200 gms
Ghee - 1 Tbsp
Grated Coconut - 1 Cup
Cardamom Powder - 1/4 Tsp

In a bowl, add maida, oil, salt and mix well
Add water gradually and knead it
Knead the dough for 10 mins
Apply some oil over the dough and let it rest for 1 hour
Heat a pan with water and add jaggery
Let it dissolve and boil for 5 mins
In a pan add some ghee and grated coconut and roast it for 2-3 mins
Strain the jaggery syrup over the coconut and mix well
Add cardamom powder and mix well
Cook the filling till excess moisture evaporates
Let it cool
Divide the dough into small balls
Roll out one dough ball (do this over a banana leaf or a baking sheet)
Place the filling in the centre and flatten it with your fingers or roll it out using a rolling pin
Heat a pan, and place the flattened poli over it
Add ghee and cook the poli till it turns golden brown in color
Serve the Coconut polis with some ghee on top.
