Corn Palak Tikki
Who doesn't love a hot tikki in this wintery evening? Am sure all of us love tikkis. These tikkis are healthy and they are very simple to make. Do try this recipe in your kitchens and let me know how it turned out in the comments section below.
Ingredients

Palak - 1 bunch
Cooked Sweet Corn - 1 no
Potato - 2 no
Chopped Green Chili - 2 no
Chopped Ginger - 1 no
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Chat masala - 2 tsp
Salt - 1 tsp
Bread crumbs - 4 tsp
Oil

Method
In a pot of hot water put the spinach leaves and cook it for about 2 minutes

Now take the spinach leaves and put it in a bowl of ice cold water to stop the cooking process, this is known as blanching.

Now chop up the spinach leaves roughly and keep it aside

In a mixer, grind the corn kernels coarsely, keep a few kernels aside to add later

Now add the spinach leaves to the mixer and pulse it to get a coarse mixture

In a bowl, add the boiled and grated potatoes, green chillies, ginger, chilli powder, cumin powder, coriander powder, chat masala, salt .

Now add palak mixture. Mix these evenly

Now add few kernels of corn and bread crumbs to the mixture and mix it evenly

Refrigerate the mixture for about 20 minutes

After 20 minutes, make tikkis from the mixture

Refrigerate the tikkis for about 10 minutes before frying

In a pan, add some oil and heat it

Place the tikkis and shallow fry it



Fry it till they become golden brown on both sides

Serve the tikkis hot with ketchup or mayonnaise
