Egg Bhurji Pav

Eggs are one of those few ingredients that are a good standby when you need to prepare a meal in minutes. It is one of the most versatile ingredients. So, no wonder, it also found its way into the Pav recipes. While not the same as pav bhaji or vada pav, the concept of this dish is a bit similar. There are so many ways to prepare a plate of egg bhurji out there. It may be made as a simple dish by just scrambling eggs in some fried onions and adding some chilli powder. However, today, we made it a wholesome dish by adding the ginger-garlic paste, onions, tomatoes and spices. It is a pretty simple recipe for a really tasty and satisfying dish!

Pav Bun

For Egg Bhurji:
Oil - 2 Tsp
Onion - 1 no. chopped
Green chilli - 1 no. finely chopped
Ginger garlic paste - 1 Tsp
Tomato - 2 nos chopped
Salt to taste
Turmeric powder - 1/2 Tsp
Chilli powder - 1 Tsp
Pav Bhaji Masala - 2 Tsp
Egg - 6 nos
Chopped Coriander leaves

Take a wide saucepan and add some oil.

Add the chopped onions, green chilli and sauté well.

Add the ginger-garlic paste, chopped tomatoes, and mix.

Now, add the salt, turmeric powder, chilli powder, and Pav bhaji masala. Mix well.

Crack open 6 eggs in a small bowl and add them to the pan.

Smash the egg yolks and mix well. Keep mixing until all the moisture evaporates.

Now, add the chopped coriander leaves.

Your egg bhurji is ready.

Now, take a tawa, and spread enough butter on it.

Take a pav, open it up and place it over the butter on the tawa. Toast the pav from both sides.

Finally, remove the pav from the tawa, stuff the egg bhurji in the middle and serve hot!
