Potato Fingers

Ingredients -

Potatoes - 4 Nos
Salt - 1 tsp
Garlic Powder - 1/4 tsp
Onion Powder - 1/4 tsp
Chili Flakes - 1/2 tsp
Coriander leaves - chopped
Bread Crumbs
Corn Flour - 2 tsp
Dry Flour - Maida

Methods -

Take 4 potatoes, peel them and chop into big chunks
Heat a pot, add enough water to boil the potatoes
Add 1/4 tsp salt and the potatoes
Boil the potatoes till they are cooked completely
The potatoes are cooked perfectly
Strain them and add it to a bowl
Add 1/2 tsp of salt, pepper, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp of chili flakes, few coriander leaves and 2 tbsp of bread crumbs
Mix it once and mash the potatoes till they are soft and creamy
Apply some oil on your palms, take a small portion of the potato mixture and make finger-like shapes
Keep them aside
Refrigerate them for 15 mins
To coat the potato fingers, take some bread crumbs in a plate
In a bowl, add 2 tsps of cornflour and add enough water and mix well
Also, take some maida in a plate
Roll the potato fingers in the dry flour, dip it into the cornflour batter, and finally roll it in the bread crumbs and set aside
Refrigerate the potato fingers for 15 mins
Refrigerating helps the potato fingers to hold its shape better
Heat some oil for deep frying
Add the potato fingers to the hot oil
Deep fry them till they are golden brown in color
Keep the flame on medium-low while deep frying
The potato fingers are ready
Serve them hot
