Puran Poli (also known as Vedmi, holige, obbattu, poli, puranachi poli, god poli, pappu bhakshalu or bobbatlu) is an Indian sweet flatbread from Southern India. With its various variations, this dish is eaten across the length and breadth of India. Poli is a dish that is prepared during most occasions, be it a festival or a special function like marriages. Puran Poli's are nothing but thin wheat flour rotis with a delicious Puran stuffing in the middle. The Puran which is made with a mixture of boiled mashed chana dal cooked with sugar and cardamom powder melts as it hits your tongue. With a dollop of ghee on top as it is known in Marathi, this sweet roti is a favourite for many Maharashtrian food fanatics. So, follow this simple recipe on how to make a Puran Poli and satisfy the cravings of those Maharashtrian Food Fanatics in your family!

Ingredients:
Chana Dal - 1/2 cup
Water
Ghee - 3 Tsp.
Cardamom pods
Cane Sugar - 1 cup

For Dough:
Atta/Wheat flour - 1 cup
Maida/All purpose flour - 1 cup
Salt
Turmeric powder - 1/4 Tsp.
Ghee - 4 Tsp.
Water

Method:
1. Soak 1/2 cup of chana dal in enough water in a bowl for about 30 minutes.
2. After soaking, empty the contents (chana dal & water) in a cooker and pressure cook it.
3. Meanwhile, in a mixing bowl, add a cup of wheat flour (aata), a cup of all-purpose flour (maida), some salt, turmeric powder, and ghee and mix well.
4. Gradually add water and knead it into a fine dough. Let it sit for about 15 minutes.
5. Meanwhile, the dal has cooked and cooled down. Remove it from the cooker.
6. In a pan, heat 3 Tsp.'s of ghee and add some freshly crushed cardamom and the cooked dal. Mix well.
7. Now, add 1 cup of cane sugar to the pan and mix well.
8. Cook until the mixture is dry and all the moisture has evaporated. Once cooked, turn off the stove and let it cool.
9. Take a little of the Chana dough and roll it in your palm to form a ball.
10. Sprinkle some aata on a flat surface and roll the dough out using a roti roller.
11. Place the Puran filling in the middle and seal it like how you seal momo’s and gently roll it out again.
12. Tawa fry the Puran Poli on both sides by drizzling some ghee on it.
13. Your Puran Poli's are ready to be devoured! Serve hot with some milk or ghee.
