Black Rice Pudding

Black Rice Pudding is my favorite way to get my tummy satisfied at home. Made with sticky whole grain black rice, coconut milk, and sugar, this warm rice pudding is creamy, sweet, a little savory, and very coconutty. It's also dairy-free and gluten-free, making it a great dessert — or breakfast — for almost any guest.

Ingredients

Black Rice - 200 ml
Water - 3 cups
Sugar
Cardamom powder - 1/2 Tsp.
Ghee - 2 to 3 Tsp.
Coconut milk - 1/2 cup (optional)
Grated Coconut

Method

1. Soak the black rice in water for at least 10 hours or overnight.



2. Pressure cook the soaked black rice by adding enough water.



3. Once the rice is cooked, mash it well.



4. Place a wide saucepan on the stove. Add the mashed black rice and sugar to the pan. Mix well.



5. Now add cardamom powder, ghee and coconut milk (optional). Mix well until the ingredients blend together completely.



6. Garnish it with freshly grated coconut.



7. Black Rice Pudding is ready to serve warm or cold.
