Cauliflower Rice

Cauliflower can shine in many forms. And it a vegetable easily loved by most kids. So, why leave out the opportunity to feed your kids some healthy veggies? Use this vegetable to prepare several dishes for your kids! This recipe shows how simple it is to turn the florets into a healthy, low-carb meal or side dish. With the coconut, chillies and onions added, the cauliflower has enough flavour to satisfy by itself, and it can also be a base for stir-fries, rice or anything else you would eat with rice.

Cook time: 30 minutes
Number of servings: 4-5 persons

Ingredients


Blanched Cauliflower - 1
Cooked Basmati Rice - 1 bowl
Onion - 2 thinly sliced
Tomato - 1 chopped
Green Chilli - 2
Grated Coconut - 2 tbsp.
A few Coriander leaves
A few Mint leaves
Ginger & Garlic paste - 1 tsp.
Sambar powder - 2 tsp.
Salt to taste
Ghee - 1 cup
Whole spices (Cinnamon, Clove & Cardamom)


Method

Heat some Ghee in a pan. Add the whole spices (Cinnamon, Clove & Cardamom), Onions & Green chili.



Saute it till the onions become transparent.



Add Ginger-garlic paste, Tomatoes, Grated Coconut, Salt, Sambar powder or Chilli powder and mix it well.



Now, add mint leaves & mix gently.



Turn off the stove, let the mixture cools down & grind it into a fine paste. While grinding pour little water. This makes the basic masala for the rice.



Preparing the cauliflower rice

Heat Ghee in the same pan & add the blanched Cauliflower.



Season it with Salt, Sambar powder or Chilli powder & mix well. Masala flavour has to coat the Cauliflower florets.



Now add the ground Masala to the Cauliflower & gently mix it.



Add the Coriander leaves, Mint leaves & mix well.



Add the rest of the ghee. Start adding the Cooked Rice in intervals, keeping the flame on low & mix it well with the Cauliflower masala.



Check for seasoning and mix the rice completely with masala.



Your cauliflower rice is ready to be served!
