Curd Vada - Thayir Vadai

With the days getting just that little bit more hotter, I think I made no mistake in assuming that all of you out there are craving something cool as much as I am. And, what better than some curd? But, having the same old bowl of some curd mixed with a bit of sugar isn't much appealing anymore, is it? Why not spice it up a bit? Make a dish out of it? Here is a simple recipe to the very much in-demand dish called Dahi Vada, that is a famous Indian Snack. A little bit of Indian flavouring to spice up the dish, and some Vada's to make it a wholesome dish! Now, doesn't that make your mouth water? A perfect mix of ingredients! Wait no more and get cooking for it doesn't get simpler than this!

Ingredients:
For Vada Batter:
Urad Dal - 200 ml
Rock Salt
Little Water

For Tempering:
Oil - 1 Tsp.
Urad Dal - 1 Tsp.
Mustard seeds - 1/2 Tsp.
Asafoetida powder - 1/2 Tsp.
Red chilli - 2 no.'s
Few Curry leaves
Piece of chopped Ginger

Curd/Dahi - 1 litre
Onion - 1 no. finely chopped (Optional)
Salt to taste
Oil for frying
Warm Water
Garnish with Coriander leaves
Garnish with Boondi

Method:
1. Soak some urad dal in water for 1 hour.
2. Grind the soaked dal with some rock salt into a coarse thick batter. Add a little water if needed.
3. Temper some urad dal, mustard seeds, asafoetida powder, red chilli, curry leaves and ginger in oil.
4. Add the tempered ingredients to the curd and whisk.
5. Add salt (onion & green chilli are optional, but you should add them now if you wish to include them in your recipe) and mix. Keep aside.
6. Wet your hands, take egg-sized batter and flatten it on your palms. Make a hole in the center.
7. Gently slip the vada's into a pan of boiling hot oil and deep-fry until it turns golden-brown in colour.
8. Dip the vada in the curd when it's still warm (not very hot).
9. Let the vada soak in the curd for about 2 hours.
10. Finally, garnish with Coriander leaves & Boondi.
11. Your Dahi Vada/Curd vada/Thayir vada is ready to be served!
