DAL PARATHA
Paratha, originally a fried north Indian dish, is a common favourite of every Indian, be they a north or south camper! And, of course, like every other dish, they come in various varieties, each healthier than the previous one. Many believe this dish to be difficult and complex to prepare. It is even believed that only professional and experts can prepare this dish flawlessly. Yet, this is just a belief. This dish, on the other hand, is one of the easiest dishes to prepare once you know the proper method. Here is the ‘Dal Paratha’ recipe broken down into a few simple steps for you to master the dish easily and effortlessly.

Ingredients:
Wheat flour dough
Ghee

For Dal Filling
Husked Green Gram (Moong Dal) - 1/4 cup
Water
Salt to taste
Turmeric powder - 1/4 tsp.
Chili powder - 1/2 tsp.
Cumin powder - 1/2 tsp.
Garam Masala powder - 1/4 tsp.
Green chili - 1 no. finely chopped
Chopped Ginger
Chopped Coriander leaves
Ghee - 2 tsp.

Preparation:
1. Take some wheat flour in a bowl.
2. Add some salt and mix well. Keep mixing as you pour water in it gradually. Add only enough water so it forms a nice stiff dough.
3. Knead well until it the dough is nice and soft.
4. Wheat flour dough is ready!

Method:
1. Add ¼ cup of moong dal in a bowl. Pour some water in the bowl and let the dal soak for 15 minutes.
2. Take a pan and add the moong dal and a little more water. Let them cook.
3. Once the dal is almost cooked, season it with salt, 1/4 tsp. turmeric powder, ½ tsp. chili powder, 1/2 tsp. cumin powder, ¼ tsp. garam masala, 1 chopped green chili, a piece of ginger finely chopped, chopped coriander leaves and 2 to 3 tsp. of ghee. Mix the ingredients well with the dal and let them cook until the dal turns nice and dry.
4. Now, Sprinkle some dry flour on a flat surface.
5. Take a big size of wheat flour dough and roll it out. Let the rolled out dough be nice and thick.
6. Place a bit of the dal filling on the center and seal the paratha.
7. Again sprinkle some flour and gently roll the paratha, making sure not to break the dough layers.
8. Heat a tawa and cook the paratha on both the sides by flipping it over. Add some ghee and cook it once again, flipping it over and cooking it on the other side as well.
9. Simple and delicious dal paratha is ready to serve!

Best with:
Serve hot with some tasty pickle, curd, some spicy chutney or ketchup. You can also have it with some other side dish if you wish to, or have it plain.
