Mutton Kola Urundai
The food of the Chettinad region of Tamilnadu is so versatile. They are the masters of cooking vegetarian dishes that mimic meat. In Tamilnadu, meat is not consumed during many festive months. So dishes like these are cooked by the women folks to satiate the meat-loving people in their household. Kola Urundai is traditionally made with mutton. Fennel Seeds gives this dish a very nice flavour. Here is an easy recipe on how to prepare these mouth-watering Urundai.
Ingredients

Minced mutton – 500 gms
Oil
Salt
Fennel seeds – 1 tsp
Poppy seeds – 1 tsp
Cashew nuts
Roasted Chana Dal – 1 1/2 tbsp
Ginger - 1 pc
Garlic
Clove
Chopped Green Chili – 2 no
Chopped Onion – 1 no
Curry leaves
Grated Coconut - 2 tbsp
Egg - 1 no
Chopped Coriander leaves

Method
1. Take a wide saucepan and add oil to it.

2. Add some fennel seeds, Poppy seeds, cashew nuts and mix well.

3. Now, add roasted chana dal, chopped ginger, garlic & green chili and some cloves.

4. Now, add chopped onions, few curry leaves and some freshly grated coconut and saute it well.

5. Now, add minced mutton to the mixture.

6. Season it with some salt and let it cook till the moisture in mutton evaporates.

7. Cool the mixture and grind it to a fine consistency mixture. Do not add any water.

8. Crack open an egg, whisk it gently and add it to the mixture.

9. Add a few finely chopped coriander leaves and mix the mixture well with your hands.

10. Now, make small balls of this mixture using your hands.

11. Heat oil in a kadai. Once the oil is hot, gently place the balls in the oil.

12. Deep fry the balls until they turn brown in colour.

Mutton Urundai's are ready to be served.
