Red Poha Upma | Breakfast
Poha upma is a simple and comforting food prepared with poha and vegetables. It is wholesome, nutritious, easy to digest and also very easy to prepare. Poha upma can be prepared with the white poha or red poha. This poha upma is made of red poha combined with not just the Indian spice powders but also onions, garlic, and other vegetables. This imparts a healthy twist to the poha making it holistic in terms of taste too.

Ingredients
Red Poha - 1 cup
Water
Ghee - 1 1/2 tbsp
Urad Dal - 1 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Red Chili - 1 no
Asafoetida powder/Hing - 1/2 tsp
Chopped Onion - 1 no
Chopped Green Chili - 2 no
Chopped Ginger - 1 no
Curry leaves
Chopped Carrot - 1 no
Salt - 1 tsp
Cooked Peas - 1/2 cup
Turmeric powder - 1/4 tsp
Grated Coconut
Chopped Coriander leaves

Method:
1. Take a cup of red poha in a huge bowl and pour enough water until the poha is completely covered.
2. Let it sit for about 20 minutes.
3. Add some ghee in a wide saucepan.
4. Add some urad dal, mustard seeds, cumin seeds, red chilli cut in half, and asafoetida powder to the pan. Saute them.
5. Add the chopped onions, green chillies, ginger and curry leaves to the pan and saute.
6. Now, add the finely chopped carrots and give it a quick stir.
7. Season it with some salt.
8. Now, add the cooked peas to the pan and mix well.
9. Add the turmeric powder to the vegetables and mix well.
10. Now, drain the excess water and add the soaked poha to the pan. Mix well.
11. Finally, garnish it with some fresh grated coconut (optional) and chopped coriander leaves.
Your red poha upma is ready to be served. Serve hot!

Tips:
You can also add other vegetables of your choice like capsicums or cabbage if you wish to.
