Semiya Payasam (Vermicelli Kheer)

Kheer, or Payasam, is another such dish that is really popular among the people of the country, be it any season. Be it summer or winter, Kheer is a dessert that is never off the menu of various feasts. And with the various varieties available out there, there is something for everyone in the market. One such kheer that can be made easily without much hassle is the Semiya (Vermicelli) Kheer. The texture of the vermicelli only adds to the appeal of this delicacy. A simple yet delish delicacy, master the simple recipe to this heavenly invention by following the following easy steps.

Ingredients:
Ghee - 1/2 Tsp.
Roasted Vermicelli - 1/2 cup (125 ml)
Water - 1 cup
Milk - 1 liter
Sugar - 1/2 cup
Cardamom powder - 1/2 Tsp.
Pinch of cooking Camphor (optional)
Roasted Cashew nuts & Raisins

Method:
1. In a wide pan, add ghee and roasted* vermicelli. Roast for a minute.
*if vermicelli is not roasted, roast till its light brown in color and has a nice aroma.

2. Add 1/2 cup of water and 1/2 cup of milk and keep stirring.

3. Add another 1/2 cup of water and rest of the milk. Cook till it thickens.

4. Add cardamom powder and cooking camphor (optional) to the pan.

5. Add 1/2 cup of sugar at intervals and cook till it reduces in volume and thickens.

6. Garnish with Roasted Cashew nuts & Raisins. You can serve it warm or chilled.
