Mutton Kofta Biryani

DESCRIPTION
Ingredients

For Kofta
Mutton Mince/Keema - 1/2 kg
Ginger garlic paste - 1 Tsp
Turmeric powder - 1/2 Tsp
Chili powder - 1 Tsp
Coriander powder - 1 Tsp
Salt to taste
Garam Masala - 1/2 Tsp
Onion - 1 no. chopped
Green chili - 2 nos chopped
Coriander leaves
Mint leaves
Besan/Gram flour - 4 Tsp

For Cooking Rice
Basmati Rice - 250 ml
Whole spices (Cinnamon, Clove, Bay leaf, Star Anise, Cardamom pods & Mace)
Salt

For Biryani
Ghee - 3 Tbsp
Whole spices (Cinnamon, Clove, Cardamom pods & Bay leaf)
Onion - 3 nos thinly sliced
Green chili - 2nos slit
Ginger garlic paste - 1 Tsp
Tomato - 3 nos chopped
Salt
Turmeric powder - 1/4Tsp
Kashmiri Chili powder - 2 Tsp
Garam Masala - 1/2 Tsp
Mint leaves
Coriander leaves
Curd - 1 cup
Saffron Milk

Method:
1. In a bowl add the mutton mince and to that add ginger garlic paste, turmeric powder, chili powder, coriander powder, garam masala, salt, coriander leaves, mint leaves, onion and green chilies
2. Mix everything together and marinate it for 1 hour
3. Soak the Basmati Rice for a minimum of 30 minutes
4. Grind the marinated meat to a coarse mixture
5. Add gram flour and mix the mixture till it is well combined
6. Make small kofta balls and fry them till you get a golden brown color
7. Boil some water in a deep pot
8. Add the soaked rice to the boiling water along with the whole spices
9. Cook the rice and strain it and keep it aside
10. In a kadai add ghee and whole spices
11. Add onions and green chilies
12. Saute the onions till they are golden brown in color
13. Add ginger garlic paste and tomatoes
14. Saute them for a few minutes and add salt, Kashmiri red chili powder, and garam masala
15. Add coriander leaves and mint leaves and add curd
16. Mix them and add the fried koftas to the masala
17. Now, layer the cooked rice on top of the masala
18. Add the saffron milk and ghee to the rice
19. Close and cook the biryani for about 15 minutes
20. Turn off the stove and let it sit for about 10 minutes
21. Your Kofta Biryani is ready to be served now.
22. Serve the Kofta Biryani hot with any raita of your choice.
