Schezwan Chicken Fried Rice

Ingredients -

To make schezwan sauce :

Red chilies - 20 nos
Oil - 1 tbsp
Ginger - 2 tsp chopped
Garlic - 2 tsp chopped
Coriander stalks - 1 tsp chopped
Ground red chili paste
Vinegar - 3 tsp
Salt - 1 tsp
Sugar - 1 tsp

To make schezwan chicken fried rice :
Basmati rice - 1 cup
Salt - 1 tsp
Oil - 1 tbsp
Ginger - 2 tsp chopped
Garlic - 1 tsp chopped
Spring onion whites
Capsicum - 1/2 cup chopped
Boneless chicken - 200 gms
Schezwan sauce - 3 tbsp
Cooked rice
Spring onion greens
Scrambled eggs

Method :

Soak 20 red chilies with enough hot water for 1 hour
Add the soaked red chilies to a mixer jar with some water
Grind it to a fine paste and keep it aside
Heat a pan with 1 tbsp oil, add 2 tsps of chopped ginger, and 3 tsps of chopped garlic and saute
Add 1 tsp of coriander stalks or you can also use celery stalks
Add the ground red chili paste and mix well
Add 3 tsps of vinegar, 1 tsp of salt, 1 tsp of sugar, some pepper and mix well
Cook for 10 mins till the paste becomes thick
The Schezwan sauce is ready, keep it aside
Heat a pot with enough water and bring it to a boil
Add 1 cup of rinsed long grain basmati rice and add 1/2 tsp of salt
Cook the rice
Strain the cooked rice and keep it aside
Heat a pan, add 1 tbsp oil
Add 2 tsps chopped ginger, 1 tsp chopped garlic, 2 chopped red chilies, few spring onion whites, 1/2 cup chopped capsicum
Saute everything for 2 mins
Add 200 gms boneless chicken pieces
Cook the chicken pieces for 5 mins on high flame
Add 1/2 tsp of salt and pepper
Add 3 tbsp of schezwan sauce and mix well
Add the cooked rice and mix again
Finally add some spring onion greens
Heat a pan with some oil
Crack open 3 eggs and add it to the pan
Add some salt and pepper and scramble the eggs
Add the scrambled eggs to the rice
Mix it altogether
Serve the Schezwan Chicken Fried Rice hot
