A hard sugar candy embedded with nuts has always been a delight to the kids. especially when they are embedded in their favourite nuts like peanuts or almonds.
A variant of this classic brittle recipe, we tried to make a peanut brittle with jaggery instead of sugar, and as you guessed, it tasted heavenly!
Here is a recipe on how to make Wonderful small pieces of this sweet snack that you can easily carry around everywhere with you to indulge you sudden cravings or hunger!

Ingredients:
Peanuts - 1 cup
Jaggery - 1 cup
Water
Ghee - 2 Tbsp

Method:
1. In a pan, roast the fresh peanuts to remove the skin. You can skip this step if you're using roasted peanuts.
2. Once the peanuts are roasted, turn off the stove, wait till it cools down and then removes the peanut skin. Rub them between the palms to easily remove the peanut skin.

3. Next, take a little water in a pot, add the jaggery to the pot and let it melt
4. Grease the tray with a little ghee.
5. Filter the melted jaggery into the pan. Now, we need to get the perfect caramel. Continue cooking and stirring the syrup.



6. To check the consistency of syrup, take a cup of water, put a drop of the jaggery syrup in it. If it turns hard and breaks with a snap, then it means that the jaggery syrup is ready. Turn off the flame.
7. Next, add the roasted peanuts and gently mix them in.

8. Remove the mixture from the pan quickly and transfer it to a greased plate and flatten it.

9. Wait till it has cooled down and cut it into small even-sized pieces.
10. Your Peanut Brittle is ready.
